Ingredients
  

  • 4 slices of thin-sliced deli ham (about 2 ounces)
  • 2 slices of cheddar cheese or any preferred keto-friendly cheese (about 1 ounce)
  • 1 tablespoon cream cheese, softened
  • 1/2 teaspoon Dijon mustard (optional, for added flavor)
  • Freshly ground black pepper (to taste)
  • Toothpicks

Instructions
 

  • Lay the slices of ham on a clean cutting board or a microwave-safe plate, slightly overlapping each other to create a rectangle.
  • In a small bowl, mix the softened cream cheese and Dijon mustard (if using) until well combined.
  • Spread the cream cheese mixture evenly over the ham slices, leaving a small border around the edges.
  • Place the cheese slices on top of the cream cheese layer, covering the ham completely.
  • Sprinkle black pepper to taste over the cheese.
  • Starting from one end, carefully roll up the ham and cheese layers into a tight cylinder.
  • Secure the roll by inserting toothpicks along the seam to keep it from unraveling.
  • Place the roll-up on a microwave-safe plate and microwave on high for about 30 seconds to 1 minute, just until the cheese starts to melt. Be careful not to overheat, as the ham may become too dry.
  • Remove the toothpicks before serving.
