Ingredients
  

  • 2 large eggs
  • 1/4 cup diced ham
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons diced bell peppers (any color)
  • 1 tablespoon diced green onions
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease the muffin tin with non-stick cooking spray to prevent sticking.
  • In a mixing bowl, beat the eggs with a whisk or fork until well combined.
  • Add the diced ham, shredded cheddar cheese, diced bell peppers, and diced green onions to the beaten eggs. Mix everything together until the ingredients are evenly distributed. Season with salt and pepper to taste.
  • Carefully pour the egg mixture into each cup of the prepared muffin tin, filling each cup about 3/4 full.
  • Place the muffin tin in the preheated oven and bake for approximately 15-20 minutes or until the egg cups are set and slightly golden on top.
  • Once cooked, remove the muffin tin from the oven and allow the egg cups to cool for a few minutes.
  • Using a butter knife or spatula, gently loosen the edges of each egg cup, and carefully lift them out of the muffin tin.
