Ingredients
  

For the Crust:

  • 1/4 cup almond flour
  • 1 tablespoon coconut flour
  • 1 tablespoon unsalted butter, melted
  • 1/2 tablespoon erythritol (or your preferred low-carb sweetener)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

For the Filling:

  • 1 tablespoon unsalted butter
  • 1 tablespoon erythritol (or your preferred low-carb sweetener)
  • 1/2 teaspoon vanilla extract
  • 1 egg yolk
  • 1/4 cup chopped pecans

Instructions
 

Prepare the Crust:

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine almond flour, coconut flour, melted butter, erythritol, vanilla extract, and a pinch of salt. Mix well until a dough forms.
  • Divide the dough into 4 equal portions.
  • Press each portion of dough into the mini muffin tin cups, forming a mini pie crust. Use your fingers to press the dough evenly along the bottom and up the sides of each cup.

Prepare the Filling:

  • In a small saucepan, melt the butter over low heat.
  • Stir in the erythritol until it dissolves.
  • Remove the saucepan from the heat and whisk in the vanilla extract and egg yolk until well combined.

Assemble and Bake:

  • Divide the chopped pecans evenly among the prepared mini pie crusts.
  • Pour the buttery filling over the pecans in each crust, filling about 3/4 of the way.

Bake:

  • Place the mini muffin tin in the preheated oven and bake for about 15 minutes, or until the filling is set and the crust is golden brown.

Cool and Serve:

  • Remove the pecan pie bites from the oven and allow them to cool in the tin for a few minutes.
  • Gently remove the pie bites from the tin and let them cool completely on a wire rack.
