Ingredients
  

  • 1 cup heavy whipping cream
  • 1/4 teaspoon peppermint extract
  • 1/4 teaspoon vanilla extract
  • 1-2 drops green food coloring (optional)
  • 1 tablespoon powdered erythritol (or your preferred low-carb sweetener)
  • 1 tablespoon dark chocolate chips (sugar-free), chopped

Instructions
 

  • In a mixing bowl, combine the heavy whipping cream, peppermint extract, vanilla extract, and green food coloring (if using). Mix well to evenly distribute the flavors and color.
  • Gradually add the powdered erythritol while whisking. Adjust the sweetness to your preference. Keep in mind that freezing can dull the sweetness slightly, so the mixture may taste a little sweeter than desired.
  • Pour the mixture into the ice cream maker and churn according to the manufacturer's instructions. Churning usually takes about 15-20 minutes, or until the mixture thickens to a soft-serve consistency.
  • During the last couple of minutes of churning, add the chopped dark chocolate chips to the ice cream mixture and let them incorporate evenly.
  • Once the ice cream reaches the desired consistency, transfer it to a freezer-safe container. Use a spatula to smooth the top.
  • Cover the container with a lid or plastic wrap, making sure it's airtight to prevent freezer burn. Place the container in the freezer for at least 4 hours or until the ice cream is firm.
  • When serving, let the ice cream sit at room temperature for a few minutes to soften slightly before scooping.
