Ingredients
  

For the Almond Crust:

  • 1/4 cup almond flour
  • 1 tablespoon butter, melted
  • 1/2 tablespoon erythritol (or your preferred low-carb sweetener)

For the Lemon Filling:

  • 1 small lemon
  • 1 egg
  • 1/2 tablespoon erythritol (or your preferred low-carb sweetener)
  • 1/2 tablespoon heavy cream

For Garnish (optional):

  • Zest from the lemon
  • Whipped cream (unsweetened) or a dollop of Greek yogurt

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Almond Crust:
    In a mixing bowl, combine the almond flour, melted butter, and erythritol. Mix until a crumbly dough forms.
    Press the almond mixture into the bottom of a small baking dish or ramekin to form an even crust layer.
  • Lemon Filling:
    Zest the lemon using a microplane or zester. Set aside a small amount of zest for garnish if desired.
    Cut the zested lemon in half and squeeze out the juice. Remove any seeds.
    In a separate mixing bowl, whisk the egg, erythritol, heavy cream, lemon zest, and lemon juice until well combined.
  • Assembling and Baking:
    Pour the lemon filling over the almond crust in the baking dish.
    Carefully transfer the baking dish to the preheated oven and bake for about 15-20 minutes, or until the lemon filling is set and slightly golden on top.
  • Cooling and Serving:
    Once baked, remove the lemon bars from the oven and allow them to cool for a few minutes.
    If desired, garnish with a sprinkle of lemon zest.
    Serve warm or chilled with a dollop of unsweetened whipped cream or Greek yogurt.
