Ingredients
  

  • 2 large eggs, hard-boiled and chopped
  • 2 tablespoons mayonnaise (look for a low-carb or sugar-free option)
  • 1/2 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2-3 large lettuce leaves (such as iceberg or romaine)
  • Optional: Sliced avocado, cucumber, or pickles for added texture and flavor

Instructions
 

  • Hard-boil the eggs: Place the eggs in a small saucepan and cover them with water. Bring the water to a boil, then reduce the heat to a simmer and let the eggs cook for about 8-10 minutes. Remove the eggs from the heat, rinse them under cold water, and peel the shells off. Chop the eggs into small pieces and set them aside.
  • Prepare the egg salad mixture: In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  • Wash and dry the lettuce leaves: Rinse the lettuce leaves under cold water and pat them dry with a paper towel.
  • Assemble the lettuce wraps: Lay the lettuce leaves flat on a clean surface. Spoon the egg salad mixture onto the center of each lettuce leaf. If desired, add sliced avocado, cucumber, or pickles on top of the egg salad.
  • Wrap it up: Carefully fold the sides of the lettuce leaves over the egg salad mixture to create a wrap. Secure with toothpicks if needed.
