Ingredients
  

  • 1 small head of cauliflower, cut into bite-sized florets
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup buffalo hot sauce (sugar-free)
  • 2 tablespoons unsalted butter, melted
  • Ranch or blue cheese dressing for dipping (optional)

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a mixing bowl, combine the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix well to create a seasoned coating for the cauliflower bites.
  • Toss the cauliflower florets in the seasoning mixture, ensuring they are evenly coated.
  • Spread the seasoned cauliflower on the prepared baking sheet in a single layer, leaving space between each piece.
  • Bake the cauliflower in the preheated oven for about 15-18 minutes, or until they are tender and slightly crispy on the outside.
  • While the cauliflower is baking, prepare the buffalo sauce by combining the melted butter and buffalo hot sauce in a small bowl.
  • Once the cauliflower is done baking, remove it from the oven and let it cool for a couple of minutes.
  • Gently toss the baked cauliflower in the buffalo sauce until each piece is coated with the spicy sauce.
  • Serve the cauliflower buffalo bites with a side of ranch or blue cheese dressing for dipping (optional).
